Vegan Mushroom Stroganoff

Vegan mushroom Stroganoff is one of the most hearty meal that you can either have for lunch or dinner. It is easy to make and it is one of the most healthiest delicious meal that is vegan and gluten- free.


So what is stroganoff?


Stroganoff is a Russian dish which is actually just a creamy mushroom sauce which is ideal served with egg noodles or fettuccine pasta.While traditional version is with meat pieces in it but I have tried to make this vegan version of the recipe with plant based milk.





Recipe:


Ingredients

1 onion diced

3 garlic cloves minced

1 tbsp. olive oil

350 grams fresh mushrooms sliced

1 tbsp soy sauce

3/4 cup vegetable broth or water

3/4 cup coconut milk or cashew cream or almond milk

2 tbsp cornstarch

1 tsp onion powder

1/2 tsp garlic powder

1/2 tsp smoked paprika

A pinch of red pepper flakes

A pinch of dried oregano

Salt & black pepper to taste

1 tbsp nutritional yeast flakes(optional)

Fresh parsley chopped


Method

1.Heat oil in a large pan, add onion and fry for about 5 minutes. Add garlic and fry for a further 1 minute.

2.Now add the mushrooms and fry over medium heat for about 5 minutes.

3.Pour in vegetable broth/water, soy sauce, onion powder, garlic powder, red pepper flakes, dried oregano, salt and pepper. Add nutritional yeast flakes as well for the cheesy flavour. Bring to a boil.!!

4.Add cornstarch to the Coconut milk (this my preference as i like the taste of coconut milk ) and stir to dissolve.

5.Pour the milk mixture into the pan and cook on low-medium heat for about 10 minutes until the sauce thickens.

6.Taste and adjust seasonings as to your preference.

Add fresh parsley to taste! Enjoy with quinoa or rice or pasta of choice or even mashed sweet potato.
